Funky Christmas Rocky Road
A Sweet Treat for the Holidays
Nothing says Christmas in Queensland like a fridge full of leftovers… and a tray of homemade Rocky Road!
This no-bake classic is perfect for gifting, snacking, or sharing at backyard barbecues. It’s quick, colourful, and guaranteed to disappear faster than the last prawns on the table.
🧁 Ingredients
- 600 g dark chocolate (chopped or in melts)
- 1 cup white marshmallows (halved if large)
- 1 cup pink marshmallows (halved if large)
- 1 cup red and green candy-coated chocolates (M&Ms or Smarties)
- 1 cup chopped nuts (almonds, pistachios, or hazelnuts)
- ½ cup shredded coconut (optional)
- ½ cup dried cranberries or Turkish delight pieces (optional for extra festive colour)
Method
Step 1 – Prepare the tray
Line a slice tin or square baking dish (approx. 20 cm x 30 cm) with baking paper, leaving some overhang to lift the rocky road out later.
Step 2 – Melt the chocolate
Place the chopped dark chocolate in a heatproof bowl and melt gently using one of the following methods:
- Microwave: Heat in 30-second bursts, stirring between each until smooth.
- Stovetop: Place the bowl over a saucepan of simmering water (double boiler) and stir until melted.
Step 3 – Mix it all together
In a large mixing bowl, combine the marshmallows, nuts, and candy-coated chocolates (plus any extras like cranberries or coconut). Pour the melted chocolate over the top and stir quickly to coat everything evenly.
Step 4 – Pour and press
Transfer the mixture into your lined tin. Press it down gently with a spatula so it’s evenly spread.
Step 5 – Chill until firm
Refrigerate for at least 1 hour, or until the chocolate is completely set.
Step 6 – Slice and serve
Lift the rocky road out using the baking paper and cut into squares or bars with a sharp knife. Wipe the knife clean between cuts for neat edges.
Festive Finishing Touches
For extra Christmas sparkle:
- Drizzle with melted white chocolate and sprinkle with crushed candy canes.
- Add a handful of dried cranberries or pistachios for a red-and-green pop.
- Wrap squares in cellophane with a ribbon for easy homemade gifts.
